Tasmania supplies approximately 25% of the yearly world abalone harvest, so when I was invited along to go on a Abalone Diving Adventure (well snorkelling) at Fortescue Bay (about 2 hours drive from Hobart) I jumped at the opportunity.

Despite the 15 degree weather and grey skies, the water was crystal clear and abalone aplenty! We harvested 4 abalone, shucked and cooked them straight on the beach… sea to stomach in less than thirty minutes, food doesn’t get much better, or fresher than that.

Due to the delicate flavour of abalone, we suggest cutting it wafer thin and frying for 30 secs in a hot wok with a squeeze of lemon juice and a pinch of salt.
