Dates, tick. Yogurt, tick. Cake, tick. Clearly this recipe is ticking all the right boxes. Sticky with big chunks of caramelised dates, crunchy pieces of walnuts sandwiched in a soft sponge, this Date & Yogurt Cake is the perfect number for any time of the day.

Date & Yogurt Cake

  • 2 cups plain flour
  • 1 cup greek yogurt
  • 1.5 teaspoons baking powder
  • ½ teaspoon baking soda
  • 100g butter, softened
  • 2/3 cup sugar
  • 2 eggs
  • 1 cup dates, chopped
  • 1 cup walnuts
  • zest of 2 oranges
  • pinch of salt

Combine sugar and butter in an electric mixture until light and fluffy. Then mix in the eggs, one by one and mix until well combined.
Add all remaining dry ingredients along with the dates, zest, walnuts.  Gently fold in egg mixture and yogurt until just combined. If mix is looking too dry, add a little extra yogurt.

Pour into a lined baking tray or loaf dish and bake for 35 mins at 170 or until golden brown and a skewer comes out clean.

We recommend serving it with a generous scoop of greek yogurt, a small spoon or mascarpone or 1/2 a tub of vanilla ice-cream, drizzled with honey and a handful of almonds. Delicious.
