Salty and sweet, these nuts are dangerously good.
Cinnamon & Salt Roasted Nuts
- 1 egg white
- 200 g (7 oz11/2 cups) mixed raw nuts
- 2 tablespoons caster (superfine) sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
Preheat the oven to 100ºC (200ºF/Gs 2) and lightly grease a baking tray.
Lightly beat the egg white in a large bowl until frothy but not stiff. Add the nuts, and stir until well coated.
In a separate large bowl, combine the sugar, cinnamon and salt, Remove the nuts from the egg mixture and place into the sugar mixture, tossing to coat.
Spread the nuts in an even layer on the baking tray and bake in the oven for 45 minutes, stirring occasionally, until golden.
Transfer to a rack to cool, then mix with extra salt to taste and serve.
