Warming olives seems to bring out the meatiness of them, making their flesh more tender and succulent and their flavour more intense. This version adds some herby flavours with thyme and some citrus freshness with orange zest. A moreish addition to any platter.
- 2 tablespoons olive oil
- 200 g (7 oz) mixed unflavoured whole olives
- 1 teaspoon fresh thyme leaves
- 1 teaspoon finely grated orange zest
Heat the olive oil in a saucepan over medium heat. Add the olives, thyme and orange zest and cook for about 5 minutes, tossing constantly to prevent the olives from burning. Remove from the heat and serve immediately.
