Double Chocolate Spelt Cookies

These crunchy and chewy chocolatey cookies are sugar-free, made with spelt flour and coconut oil – nice and healthy, so you can enjoy in bulk quantities.

Double chocolate spelt cookies

  • 1 cup spelt flour
  • 1/3 cup cocoa
  • 1/2 tsp bi carb soda
  • 1/2 teaspoon vanilla essence
  • 1/3 cup coconut oil, melted
  • 1 egg
  • 1/3 cup cocoa nibs

Preheat oven to 180*C.

Sift together flour, cocoa and baking soda. Add oil, egg and vanilla and beat using electric beaters until well combined. Stir through cocoa nibs.

Shape into balls and place on prepared tray. Press down with a fork. Bake for about 12-15 minutes. Allow to cool for a few minutes then transfer to a drying rack to cool thoroughly.
