Quick Cabbage Slaw with Black Sesame Seeds

A nice balance of tangy, sweet and crunchy, this quick cabbage slaw is a great accompaniment to a heap of Asian dishes and adds a nice fresh and sharp addition to a sandwich.

I made this dish originally to go with a donburi (like this eggplant one) but often add it into the mix of a Japanese breakfast, and have also had it on a pulled pork roll (like this one).

  • 1/4 cabbage head, finely shredded
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 tablespoon mirin
  • 1 tablespoon black sesame seeds, toasted

Mix together the vinegar, mirin and sugar until sugar dissolves.

Combine cabbage with vinegar mixture and sesame seeds and allow to rest for at least 1 hour.
