This raw salad of Brussels sprouts and radicchio works well as a side for lamb, pork and fish in particular. The balance of tastes makes it pretty versatile – bitter radicchio, nutty brussels sprouts, creamy almonds, and a sweet and sour dressing.
You could add a little dill, parley, tarragon to suit your preference and then meal you’re teaming the salad with.
Shaved Brussels Sprouts Radicchio Salad
- 10-15 Shaved brussels sprouts
- 1/2 head large radicchio
- 1/3 cup raisins
- 1/3 cup flaked almonds
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon djion mustard
- 1 teaspoon honey
- salt and pepper
Whisk together the dressing ingredients, adding salt and pepper to taste.
In large bowl, combine salad ingredients. Add dressing and mix through well to combine.
