Strawberry and Tomato Gazpacho

This super fresh and easy chilled soup is perfect as an entree, or a summer meal with some crusty bread. It’s feminine and fragrant, and a bit of an energy kick.

You could probably even add some vodka or gin and serve it as shots.

Strawberry and Tomato Gazpacho

  • 200g strawberries
  • 500g tomatoes
  • 200g cucumbers
  • 1 garlic clove
  • 2 jalapeno chillies
  • 2 small red capsicums
  • 1 small green capsicum
  • 1/2 red onions
  • 40ml sherry vinegary
  • 60ml olive oil
  • salt
  • fresh basil leaves, to serve
  • black pepper, to serve
  • balsamic reduction, to serve, optional

Combine strawberries, tomatoes, cucumber, garlic, jalapenos, peppers, onions and vinegar in a food processor or blender and blend until smooth. Add olive oil and blend until combined. Taste for seasoning and refrigerate until serving.

For balsamic reduction, combine 1/2 cup balsamic vinegar with 1 tablespoon sugar and simmer, stirring until vinegar reduces by half.

Serve soup chilled, topped with basil, pepper and balsamic reduction.
