Yup, it sounds weird but it really works – the sweet, tart tomatoes with aniseed flavours of basil and gentle, creamy flavours of silken tofu, bound together in holy matrimony by fruity olive oil.
Tomato, Tofu and Basil Salad
350g tomatoes, chopped
200g silken tofu, cut into 1cm cubes
handful of basil leaves, torn
25ml olive oil
salt & pepper
Combine tomatoes, tofu and basil in a bowl. Drizzle over olive oil and sprinkle generously with salt and pepper. Be gentle when stirring the salad, as the tofu is really soft and will break apart easily – toss once just before serving.
